Baking Paw-Print Vanilla Cupcakes

My little nephew wanted a Paw Patrol theme for his birthday cake and his mom and dad figured it would be okay to have cupcakes with paw prints for a cake. I agreed on the cupcakes, but insisted on a central cake as well. I'll tell you more about that in the next blog. Let me show you first how easy it is to make cupcakes with paw prints on them.

You will need 125 g margarine (or butter, if you prefer).

Cream the margarine and 250 ml sugar together in a bowl.

Add two eggs and beat well.

Add a teaspoon vanilla essence (5 ml) and 150 ml milk. Mix well.

In a second bowl, sieve 2 cups flour (500 ml).

Add 10 ml baking powder.

Add a pinch of salt (1/2 teaspoon more or less).

Add the dry ingredients to the wet mix.

Mix well with an electric beater.

Fill a muffin pan with cupcake liners. (This is really optional. You can spray the pan with a non-stick spray and add the mix directly to the pan as well).

Scoop the mix into the liners.

The liners should be filled about 2/3. Stick them in a preheated oven at 180 degrees Celsius and bake for about 30 min. They are done when your test pen comes out clean.

Remove them from the muffin pan and allow to cool on a wire rack.

Once they are cool enough to handle, scoop the centers out. You can also use a teaspoon if you don't have a nifty gadget to perform the task.

You now have hole-some cupcakes ;-)

Fill the holes with caramel.

Make a dark icing mix and smear it smoothly over the tops of the cupcakes.

Put white chocolate discs on the icing.

Fill a decorating pen with white icing.

Make five dots for each disc to simulate toe prints. That's it. Easy as anything!
