Baking a Quick Wholewheat Loaf Using A Sourdough Starter

In the previous blog I showed you how to 'cheat' at baking bread when you are pressed for time so you could deliver a delicious home-baked bread in half the time. I use the same recipe that I used to bake yesterday's Milk Bread Loaf, to bake today's Wholewheat Loaf, swapping out a couple of ingredients only.


Add 2 1/2 cups (675 ml) Cake Flour and 2 cups (500 ml) Wholewheat Flour to a large mixing bowl. The Cake Flour is much lighter than the other flour and will rise in a shorter period of time.
 

 Add 1 1/2 teaspoons (7,5 ml) salt, 2 tablespoons (25 ml) sugar to the bowl.

Add a packet on INSTANT Dry Yeast to the bowl. Optionally, you can also add 1/2 a cup (175 ml) sunflower seeds for flavour and an interesting texture. The yeast will give rise to our dough in today's recipe, while the addition of the sourdough starter will be limited to adding flavour as we will not allow it enough time to develop fully and allow the dough to rise. Mix all the dry ingredients together.


Pour a cup (250 ml) of milk into a measuring jug. Add 100 ml water and 2 tablespoons (25 ml) oil. Heat this to lukewarm.


Adding the Sourdough Starter to this recipe is optional to its success, but it does add a lovely flavour. Fill the measuring jug up to the 500 ml mark if you opt to include the sourdough starter.


Bring the dough together.


Knead the dough very well as we will not be knocking it back and kneading it a second time.


Prepare a bread tin with non-stick spray and dust it with flour. Shape the dough to fit in the bread pan.


Put the dough in the pan and push it into the corners.


Cover with plastic and allow to rise in a warm dry place. This will take approximately 1-2 hours.


Brush with egg once risen.


Sprinkle an optional topping over. I opted for more sunflower seeds.


Bake for 35-40 minutes in a preheated oven at 200°C.


Allow to cool slightly on a wire rack.


Best served slightly warm with real butter, but you know your own preferences better than I do.
