Potato Salad With Homemade Mayo

Potato salad is nothing new, but it remains eternally popular with potato lovers the world over. We were well on our way with making a potato salad today when we suddenly realized that there was no mayo in the house! No problem. It takes only a few minutes to make your own delicious homemade mayo. I show these easy steps in today's blog.


Mix together 1 teaspoon salt, 80 ml white vinegar, the yolks of 2 eggs, the juice of 1 lemon and 2 tablespoons Hot English Mustard. Slowly add 130 ml cooking oil while beating the mixture with an electric mixer.


Now add 2 tablespoons (25 ml) sugar and 2 tablespoons (25 ml) prepared Hot English Mustard.


Keep mixing until the mayo has a smooth consistency. The mayo can be used as is, but I recommend you improve it even further on the stove.


Transfer the mixture to a pot and bring to the boil on a hot plate. Keep beating at a medium to slow speed all through the cooking time.


The mixture will thicken after a little while.


To finish the potato salad, boil 6 medium potatoes, peel and dice. Finely chop two mediums onions. Add 3 boiled eggs that have been diced. Add salt and pepper to taste directly to the mayo, as well as 2 teaspoons dried mint. Empty all the hot mayo over the hot potato salad. This salad is great whether enjoyed hot or cold.
