Bake A Coconut Wheel

Today's bread is a delicious blend of all the flavours I love in my favourite crunchy cookies. The bread is semi-sweet and filled with coconut. A hint of peanuts adds a whole new dimension to the taste experience. This bread wheel is delicious on the tea table, or as an accompaniment with a meal.


Find a large mixing bowl and add 1 cup (250 ml) oats, 1 cup (250 ml) brown bread flour and 2 cups (500 ml) cake wheat flour.


Add 1 cup (250 ml) desiccated coconut, a teaspoon (5 ml) salt and 1/2 cup (125 ml) sugar. You may prefer to swap the sugar with honey in equal amounts. If adding honey, rather than sugar, add it with the wet ingredients.
Option 1: If you are using Instant Yeast, you should add a packet to the dry ingredients.


Mix the dry ingredients well.


Now add a cup of (250 ml) sour milk, 1 egg, 1 cup (250 ml) sourdough starter, 50 ml cooking oil and 4 tablespoons (50 ml) peanut butter. In some recipes sour milk is used to activate a raising agent. That is not the case in this recipe. Here it is simply used to add more flavour to the dough. It can therefore easily be swapped out for fresh milk.


Bring the dough together.


Knead the dough for about 10 minutes.


Divide the dough into 16 equal balls.


Prepare a round cake tin with non-stick spray and lightly flour the surface.


Pack 10 balls around the perimeter of the tin, 5 towards the middle and one in the center of the tin.


Cover with plastic and allow to rise to double the size in a warm dry place.


When the dough has risen, bake the bread for 50-60 minutes in a preheated oven at 200 °C


Remove from the oven when done. You will hear a hollow sound when you tap the bottom of the bread if it is done.


Allow to cool on a wire rack.


This is a tear-and-share loaf that can easily be torn where the dough balls used to be.


Enjoy as is, or with a little butter.
