Finely chop up one onion and half a green-pepper.
Fry the onion in some oil.
I used a very large green-pepper and therefore used only half. If yours is smaller, you may opt to use the whole pepper. Finely chop this and fry with the onions.
Add the dry ingredients to a large mixing bowl. You will need 2 cups (500 ml) cake flour, 4 teaspoons (20 ml) baking powder and 1 teaspoon (5 ml) salt.
We add a little more flavour with the addition of 2 teaspoons (10 ml) crushed garlic and 1 teaspoon (5 ml) Italian Herbs.
Now add two cups (500 ml) milk, 2 tablespoons (25 ml) cooking oil and 1 egg.
Mix the batter well and then stir in the fried green-pepper and onion.
Heat a pan with a little oil (unless you have a wonderful non-stick pan that does not require the addition of oil!). Drop the batter onto the hot pan.
Once small bubbles begin to form on the surface, the flapjacks are ready to be turned.
Flip them over and continue frying.
Serve hot off the griddle with butter and cheese.
