I promised a friend I would get her some homemade cookies from the local bazaar, but ended up not going. I dislike going back on my word, and felt obliged to make up for it. There was nothing left to do, but to quickly whip up a batch of cookies myself. My grandmother used to make the most delicious old-fashioned custard cookies, and they are still a firm favourite with the whole family. In today's blog I show you how to make these cookies in no time at all.
Measure 300 g (300 ml) butter and 1 cup (250 ml) sugar in a mixing bowl.
Cream the butter and sugar together and then add a teaspoon (5 ml) of vanilla. Mix.
Sift the dry ingredients in a separate bowl.
Add 3 1/2 cups (875 ml) cake flour, 2 cups (500 ml) custard powder, 1 teaspoon (5 ml) baking powder and a pinch (2 ml) salt.
Add the wet ingredients to the dry ones and mix with a spatula or spoon.
Coat a large baking tray with non-stick coating.
Roll the dough into small balls and space them on the baking tray.
Press down with the teeth of a fork to give them their familiar grooves.
Preheat the oven to 200 °C and bake for 10 minutes.
Allow to cool on a wire rack and enjoy!
