Baking A Fruit Jelly Roulade

Finding great joy in teaching my niece how to bake, I figured it was about time she learned how to bake a Swiss roll or roulade. She was thrilled at this prospect. She paged through my book and finally settled on a cake she liked. We did not have the necessary filling, but I told her we could make our own fruit jelly filling. The result of this is that I show you how to make both a roulade, as well as a fruit jelly in today's blog.

The options she liked best.


You will need 4 eggs (whites only), 3/4 cup (180 ml) cake flour, 3/4 cup (180 ml) sugar and 2 tablespoons fruit juice.


Beat the egg whites to a soft peak stage.


Slowly add the sugar while you keep beating.


Fold in half the cake flour.


Fold in the remainder of the cake flour and add 2 tablespoons (25 ml) fruit juice.


Line a baking tray with wax paper.


Pour the batter onto the lined tray.


Spread the mixture out evenly.


Bake in a preheated oven at 200 °C for 15-18 minutes.


Place a damp cloth on the table and turn the cake out on the cloth.


Remove the paper.


Use the dish cloth to slowly roll the cake up.


This is one fast learner!


Hang the roulade up inside the damp dish cloth.


Here you can see the roulade sitting snugly in its cloth.


Time to make the jelly. I used this frozen fruit I found in the freezer.


Empty the fruit into a pot and add 1 cup (250 ml) sugar to the pot. I also added 2 tablespoons (25 ml) lemon juice.


Add a little bit of water and bring to the boil.


Allow the fruit to cook on the stove top, stirring occasionally. Gradually, the syrup will start to thicken.


We cheated and thickened our syrup with a little bit of cornflour, mixed with water. Set the jelly aside to cool completely.


Time to unroll the roulade.


Work very gently with your roulade.


Spread the jelly evenly over the whole roulade.


Roll the roulade back up again.


Punch out some cute shapes from paper.


Place your punched out shapes on the roulade.


Dust the roulade with icing sugar.


Carefully remove the paper shapes..


You now have a pretty roulade to impress the family with.
