Make Chicken & Mushroom Soup in the Pressure Cooker

Winter is the best time for stews, broths and soups. And who does not like a hearty chicken soup? If it does not nourish the body, it is sure to hit the right spot in our emotions to make a grey day seem better and warmer. In today's blog, I share a recipe for making a nourishing chicken and mushroom soup in the pressure cooker.


I use chicken fillet which I cut into smaller strips.


The cut up chicken strips.


Add some water to the pressure cooker. I added roughly 500 ml.


Chop up to large onions.


Chop up a red pepper and some carrots.


Chop up half a bushel of celery.


My marrows were already chopped and the two punnets of mushrooms were added whole.


Add two stock cubed of chicken stock, a proper dash of lemon juice and salt and pepper to taste.


My personal preference is to add a heaped spoon of crushed garlic and a spoonful of Panipuri. Panipuri is basically crushed mint and other green herbs.


Add all to the pot.


Set the timer to cook.

I then put a stick blender in the soup to blend everything together.


Ready to serve!
